Mt. Valley Vineyard - 2009 Vintage

Mt. Valley Vineyard & Winery is pleased to announce a new varietal wine for the 2009 season.  Made from 100% Edelweisse grapes, our latest white wine is sure to please.  Named after an all-girls club formed in the early days of Mt. Valley township, we hope you will try You Go I Go during your next visit to the winery. 


Mt Valley 2007 Vintage
Red Wines
Nic & Vic:

Our signature wine.  Named after the two old bachelors from whom the vineyard and winery land was purchased over 15 years ago.  We stop the fermentation on this wine with residual sugar remaining.  This is a sweet wine with a lot of fruit flavor.  Nic & Vic is made from our Marechal Foch grapes that we planted in the spring of 2002.  Since our first season, Nic & Vic continues to be our best selling wine. 
Mt Valley Red:

A dryer version of Nic & Vic.  Fermentation proceeds until the yeast consumes all available sugar.  Some "softening" techniques are used to reduce the astringency sometimes associated with the Foch grapes.  Personally, this is my favorite red.  It complements a steak dinner quite well or can be consumed on its own just fine.
Mo's Choice:

A new entry to our repertoire for the 2008 season.  We made several contacts during 2007 from customers who claimed to have "a Concord vine" in their backyard.  They wondered if we would be interested in making wine from it.  There was one vine in particular (from Mo's farm - down the airport blacktop road) that we were impressed with.  The maturity and vigor of the vine and fruit were very impressive.  For a couple bottles of the end product, we were allowed to those Concords.  I am always looking for mutual agreements such as this!
White Wines
As a general rule, never store your white wine in the refrigerator.  Typically people like white wines chilled a bit (to about 55 degrees), but the refrigerator is too cold for wine storage.  When wine is stored in the refrigerator, you will commonly find two faults with the wine.  One: The flavor is diminished.  The fruit aroma and taste (which is plentiful in our wines) will be degraded when the wine is too cold.  Second:  You may notice tartaric acid crystals in the wine.  We do not cold stabilize our wines so as to preserve as much of the natural acids and flavors as possible.  When wine is stored in cold temperatures, the harmless crystals may appear in the bottle. 
Higginbotham Schoolhouse #9

Named after the first schoolhouse in Mt. Valley township, Higginbotham is a new white wine for our 2008 season.  The wine is a bit sweeter than the other whites and is a blend of our LaCrescent and Edelweisse grapes.  We sell this wine in a cobalt blue California hock bottle.  Chill the wine to about 50 - 55 degrees (as you would with any of our whites) and enjoy it on a warm summer day.  We have received a lot of positive comments about this wine and the history behind the Higginbotham Schoolhouse has a lot of former students wanting to give it a try.
Beaver Creek

Named after a creek that meanders through Mt. Valley Township, our Beaver Creek wine was our best selling white in 2007.  Described as a semi-sweet and fruity wine, the apple and pear aromas are abundant in this crisp and refreshing wine.  Serve chilled but not cold.  A good rule of thumb is to store at room temperature and place in the refrigerator about 20 minutes before serving.  This will bring the temperature of the wine to the ideal mid-50's. 

Bear Creek

The dryest of the dry wines.  This wine is named for the creek that flows through the local golf course and is a varietal made 100% from our St. Pepin grapes grown in our vineyard.  We don't sell a lot of Bear Creek but it is my personal favorite.  As long as I am the wine maker and our St Pepins produce, I will be sure to have some Bear Creek on hand.  Notice the grapefruit and citrus aroma's that some compare to a Savignon Blanc.
Fruit Wine
Mt. Valley Cranberry

The cranberries come fresh from the Wisconsin Cranberry Cooperative in Wisconsin Rapids.  This wine has no concentrates or anything else added except freshly crushed cranberries.  After crushing the berries, we ferment the wine by placing the fruit in large bags and letting them soak in a tank filled with pure Mt. Valley well water.  We ferment the wine to arrive at a 13% alcohol content.  This is an easy drinking wine when chilled - be careful, before you know it the bottle will be gone!  This is a refreshing wine to enjoy on a warm summer day with grilled burgers.
